Balsamic Glazed Salmon & Strawberry Salsa

Using strawberries for savoury dishes might sound weird but they actually pair beautifully with salmon and balsamic. Don’t believe us? Give it a try and see for yourself. Balsamic and strawberries is a match made in heaven and many chefs will swear by it, introducing salmon between the pair is our 2017 food breakthrough. The rich texture pairs well with the sweetness from strawberries and tartness from balsamic, hence making this #DSSCVerified.

Challenge Level: Intermediate

From The Pantry:

  • 650-750 grams salmon fillet
  • 1/4 cup balsamic vinegar
  • Salt and pepper to taste
  • 1 and 1/2 cups strawberries, diced
  • 1/4 cup cilantro
  • 1 tablespoon jalapeño, diced
  • 2 tablespoons green onion, diced
  • 2 tablespoon lime juice
  • Apple Cider

Cook Away:

  1. Preheat the oven to 190C.
  2. Place the salmon fillet on a baking tray and brush 2 – 3 coats with balsamic vinegar. Save the leftover balsamic vinegar for later.
  3. Season the salmon fillet with salt and pepper to taste.
  4. Bake in the preheated oven for 15 – 20 minutes.
  5. Once cooked through, brush a few more coats of the leftover balsamic vinegar on salmon.
  6. In a separate glass bowl combine strawberries, cilantro, jalapeño, green onion and lime juice.
  7. Season the salsa with salt and pepper to taste.
  8. Add a dash of Apple Cider

Scoop salsa on top of salmon and enjoy!
