Love cheesecakes? Who doesn’t! Master that perfect buttery crust and creamy texture with this Classic New York Cheesecake recipe.

From The Pantry:
- 2 cups unflavoured digestive biscuits, crushed
- ½ cup butter
- 5 packets of Philadelphia cream cheese (226 grams each)
- 2 tablespoons flour
- 1 ¾ cups sugar
- 5 eggs
- 2 egg yolks
- 1 ½ teaspoons vanilla essence
- ⅓ cup whipping cream
- 1 teaspoon lemon rind
Cook Away:
- Melt the butter and add it to the crushed biscuits.
- Combine well and press onto the bottom of a springform pan. Set aside.
- Take a large bowl and put flour, vanilla essence, cream cheese, and sugar in it. Combine these using an electric mixer until fluffy.
- Now add the eggs and egg yolk to this mix and mix until just combined.
- Stir in the lemon rind and whipping cream.
- Pour the mix onto the crust in the pan.
- Bake at 160C for 60 minutes, or until centre is nearly set when shaken.
- Let it cool for 15 minutes. Loosen the crust from the pan.
- Cool for 30 minutes more and now remove the sides of the pan.
- Let the cheesecake cool completely. Put it in fridge to chill for minimum 4 hours before serving.
