Classic New York Cheesecake

Love cheesecakes? Who doesn’t! Master that perfect buttery crust and creamy texture with this Classic New York Cheesecake recipe.

Prep time: 30 minutes

Caters to: 14 gobblers/servings

Challenge level: Intermediate

From The Pantry:

  • 2 cups unflavoured digestive biscuits, crushed
  • ½ cup butter
  • 5 packets of Philadelphia cream cheese (226 grams each)
  • 2 tablespoons flour
  • 1 ¾ cups sugar
  • 5 eggs
  • 2 egg yolks
  • 1 ½ teaspoons vanilla essence
  • ⅓ cup whipping cream
  • 1 teaspoon lemon rind

Cook Away:

  1. Melt the butter and add it to the crushed biscuits.
  2. Combine well and press onto the bottom of a springform pan. Set aside.
  3. Take a large bowl and put flour, vanilla essence, cream cheese, and sugar in it. Combine these using an electric mixer until fluffy.
  4. Now add the eggs and egg yolk to this mix and mix until just combined.
  5. Stir in the lemon rind and whipping cream.
  6. Pour the mix onto the crust in the pan.
  7. Bake at 160C for 60 minutes, or until centre is nearly set when shaken.
  8. Let it cool for 15 minutes. Loosen the crust from the pan.
  9. Cool for 30 minutes more and now remove the sides of the pan.
  10. Let the cheesecake cool completely. Put it in fridge to chill for minimum 4 hours before serving.
