Bhane’s Ice Cream Ninja, Gaurav Karki Churns Out An Ace Recipe To #BeatTheHeat

With the summer sun firmly set in, our google maps instantly direct us to bhane. for ice cream. The eccentric flavours, be it Apricot & Plum or Strawberry & Goat’s Cheese have us scooping up quantities that our trainer makes us pay for the day after. Say hello to Gaurav Karki, the gent elevating the ice-cream game in #OurCity and bringing you out-of-the-box flavours that keep you coming back for seconds (and thirds, and fourth, and fifths, you get the point).

Fig & Blackberry Ice Cream

Talking about his inclination to create outré combinations, Karki shares “Inspiration is found 24 hours a day, it is found everyday and in everything. Like a light within us, the passion, commitment, work, and knowledge, it allows us to do extraordinary things.” His latest i-scream-you-scream creation, Fig & Blackberry ice-cream, is nothing short of art and he shares, “We put a lot of love into it, we wanted the sweet and juicy fruits to shine and aiming to push the envelope, we made it a gelato using coconut milk. It’s made without eggs and is completely vegan, making it something everyone can relish!”  However, when you are perpetually in the lab (we mean kitchen), not all inventions share the same fate and some result in a bizarre combination, not appealing to every palate, “I created an ice cream called Green Monster once; it had spinach, banana, and pineapple. The response to it was quite divided,” chuckles Karki, talking about one such time.  

Armed with maestro tips & tricks up his chef’s sleeve, the inked gent shares a bangin’ candied walnuts ice-cream recipe you can churn out without an ice-cream machine. Infused with candied walnuts and topped with caramelised bananas, it’s just what you need to #BeatTheHeat.

From The Pantry:

Candied Walnuts-

  • 4 tablespoons unsalted butter
  • 1 cup pecans, coarsely chopped
  • 2 tablespoons light brown sugar
  • 2 tablespoons granulated sugar
  • 1/4 teaspoon salt

Candied Bananas-

  • 4 tablespoons unsalted butter
  • 3 firm yellow bananas, chopped or sliced
  • 3 tablespoons packed light brown sugar
  • Pinch of salt

Candied Walnut Ice Cream-

  • 1/4 cup sugar
  • 1/2 cup heavy cream
  • 2 cups buttermilk
  • 2/3 cup sweetened condensed milk
  • 3/4 cup evaporated milk
  • 1/2 teaspoon vanilla extract
  • 1 cup candied walnut
  • 1/2 cup coarse sea salt

Cook Away:

Candied Walnuts-

  1. Melt butter in a skillet over medium heat and add walnuts, brown sugar, granulated sugar, and salt. Cook, stirring occasionally for 6 to 8 minutes, until the sugar is dissolved and the mixture is stick.
  2. Spread the nuts on a baking sheet and allow them to cool to room temperature.
  3. Refrigerate for a minimum of 10minutes before adding to the ice-cream mix.

Candied Bananas-

  1. Melt butter in a skillet over medium heat and add bananas, stirring to coat. Sprinkle in brown sugar and salt.
  2. Cook, stirring, for 2 to 4 minutes, or until the bananas are tender and coated with caramel sauce.

Candied Walnut Ice Cream-

  1. Whisk together sugar, heavy cream, buttermilk, condensed milk, evaporated milk, vanilla extract, and candied walnut in a bowl.
  2. Pour the mixture into an airtight ziplock bag.
  3. In a larger, zip-lock freezer bag add the buttermilk mix bag. Press out the air and seal until ready to churn out the ice-cream.
  4. Fill a large container, three-fourth to the rim with about 10 cups ice and add sea salt.
  5. Nestle the chilled bag of ice-cream mix in the middle of the container and close the lid.
  6. Shake vigorously for about 15 minutes or until the the mix is thickened.
  7. For soft serve, snip a corner at pipe or freeze for one hour for firm ice cream.
  8. Top with candied bananas and walnuts.
