Avocado and caprese. You cannot not like either of the two, which have the world swooning. Now think of a treat that marries both — that’s right! We just put your two favourite flavours in one bite, and trust us, you won’t get enough of it once you make it.

From The Pantry:
- 2 ripe avocados
- 2 teaspoons fresh lemon juice
- 4 slices of bread
- 115 grams fresh mozzarella, sliced to fit the bread
- 1 cup grape tomatoes, halved
- ¼ cup basil leaves, roughly chopped
- Sea salt and black pepper, to taste
Balsamic glaze (for drizzling)
- ½ cup Balsamic Vinegar
- 5 tablespoons brown sugar
Cook Away:
- For the balsamic glaze, mix balsamic vinegar and brown sugar in a saucepan over medium heat. Stir constantly until the sugar dissolves. Bring to a boil, then reduce heat to low, and simmer until glaze is reduced by half, in about 20 minutes.
- Glaze should coat the back of a spoon. Let it cool and pour into a closed container; store in refrigerator to be used later.
- Cut the avocados in half, remove pit, and scoop the flesh into a small bowl.
- Add the lemon juice, sea salt, and black pepper to the bowl. Use a fork to mash the ingredients together, keeping the texture slightly chunky.
- Toast the bread and spread the mashed avocado mix evenly onto the slices.
- Top with fresh mozzarella slices, tomatoes, and basil. Season with additional salt and pepper, as desired.
- Drizzle balsamic glaze on top and serve immediately.
