Cold Brew Tea

We recently discovered our new tea treasure, CAHA, and couldn’t help but get the good folks from there shake up ace cold brew recipes. Get your yoohoo straws out, it’s time for iced tea pitchers.

 

The Iced Plum Brew: When your tea game is ‘strong’

Prep time: 20 minutes + 90 minutes sit time

Caters to: Makes 1 glass

Challenge level: Beginner

From the Pantry:

  • 4 cubes ice
  • 1 teaspoon green tea leaves
  • 6 plums, cut
  • 2 teaspoons sugar
  • 1 cup water
  • Lemon juice to taste

Cook Away:

Plum Syrup

  1. Take a medium saucepan, add sugar and water to it. Bring this mix to a boil.
  2. Add the plum pieces to reduce the heat and let it simmer for 10 minutes.
  3. Remove from stove and let the mixture steep for 30 minutes.
  4. Now strain the plum syrup into a small bowl and add the lemon juice to it.
  5. Cover the bowl and put it in the fridge for a minimum of 30 minutes.

Cold Brew-

  1. Take a rock glass and put a big ice cube at the bottom. Drizzle a few drops of water on the ice cube to trigger the melting.
  2. Put the green tea into the glass and let it sit for 20 to 30 minutes.
  3. Strain out the tea leaves and add ¼ th of the plum syrup to the glass.

Add more ice cubes and you’re ready to scoosh!

 

White Peach Iced Tea: Make it a healthy summer

Prep time: 20 minutes + 45 minutes sit time

Caters to: Makes 6 glasses

Challenge level: Beginner

From the Pantry:

  • 3 ripe peaches (white or yellow), sliced
  • 1 cup granulated sugar
  • 1 cup water
  • 4 teaspoons white tea leaves
  • 2 teaspoons pure vanilla extract
  • 8 cups water

Cook Away:

  1. Combine the peach slices, granulated sugar, water, and vanilla extract in a medium-sized saucepan. Bring to a gentle boil over medium heat; occasionally stirring until the sugar dissolves.
  2. Take the pan off heat; cover it with a lid and allow to steep for 30 minutes.
  3. Using a whisk or wooden spoon, break down the slices until completely mashed.
  4. Place a bowl underneath a fine mesh strainer, and strain as much syrup out of the mashed fruit as possible. Cover the bowl and chill in the refrigerator, discard the stewed fruit.
  5. Boil six glasses of water and pour into a heatproof pitcher. Add tea leaves to water and let it sit for 5 minutes.
  6. Once brewed, strain out the leaves and refrigerate the pitcher to cool as required.
  7. Once chilled, take out the pitcher of water and add the peach syrup to it. Serve with fresh peach slices and ice.
