From the Pantry
Cake
1/2 cup flour
1/2 cup cocoa powder
1/2 cup butter
3/4 cup pure maple syrup or honey
1/2 cup mashed sweet potato or pumpkin
Frosting
1/2 cup cocoa powder
1/4 cup coconut oil
3 teaspoons maple syrup or honey
1 pinch vanilla extract
Cook Away
Sift the flour and cocoa powder and mix together.
Line a small, deep baking tray with baking paper and set aside.
Melt your butter and honey or maple syrup together.
Mix the honey mixture with the flour and cocoa.
Stir in the sweet potato or mashed pumpkin.
Add flour if the mixture is too thin and milk if it’s too thick.
Put the batter into a dish lined with butter paper and refrigerate for 30 minutes.
Mix the frosting ingredients and spread it on the cake when it’s cool.
