From The Pantry:
Marinade –
- 30 ml oil
- 2 teaspoons salt
- 2 teaspoons pepper
- 5 grams fresh rosemary leaves
- 150 grams beef tenderloin
Filling –
- 1 tablespoon olive oil
- 30 grams butter
- 5 grams fresh rosemary leaves
- 30 ml barbecue sauce
- 15 grams jalepeños, chopped
- 50 grams yellow cheddar, grated
- 15 grams caramelised onions
Sandwich –
- 1 spelt baguette
- 30 grams mayonnaise
- 30 grams mustard
Cook Away:
Marinade –
- In a bowl add oil, salt, crushed pepper, and rosemary leaves.
- Marinade the beef tenderloin in this mixture and refrigerate for 2-3 hours.
Filling –
- In a cast iron pan, heat olive oil. Once hot, sear the tenderloin on one side for a minute, until light brown.
- Turn to the other side and add butter and rosemary to the pan.
- Baste the tenderloin with flavoured butter at medium heat, until the other side of beef is cooked.
- Remove from pan and rest for approx. 5 minutes. Slice once rested.
- In a bowl add barbecue sauce, jalepeños, cheddar, caramelised onions, and sliced beef.
Sandwich –
- Split the baguette into half and toast on both sides.
- On one side spread mayonnaise and on other house ground mustard.
- Add the beef mixture on one side and heat in the oven until cheese melts.
- Close the sandwich with mustard laden side and serve piping hot.
