Plum Cake

Caters to: Makes one 8-inch cake

Prep time: 20 minutes

Cook time: 40 minutes

Challenge level: Beginner

From The Pantry:

  • 6 eggs
  • 1 ½ cup sugar
  • 1 cup butter
  • 125 grams almonds, chopped
  • 2 cups refined flour
  • 2 teaspoons vanilla essence
  • 2 ½ cups mixed fruits (plums, raisins, cherries, etc.)

Cook Away:

  1. Preheat the oven at 150C.
  2. Take an 8-inch cake pan and line it with baking paper.
  3. Mix 2 tablespoons of flour, almonds, and mixed fruits in a bowl and set aside.
  4. In a bowl add butter, sugar, vanilla, and eggs and cream together.
  5. Fold in the remaining flour into this bowl.
  6. Now fold in the almonds mixture into this.
  7. Pour this into the cake pan and bake for 40 minutes.
  8. Your tea time snack is ready!
