Grilled cheese means things just got serious (we don’t joke about cheese, unless we feeling particularly blue). The gooey cheese threading apart between bread slices, loaded with strawberries and avocados; it’s irresistible. Roasting the strawberries and loading them up with balsamic vinegar is what we call amping it up a notch. This strawberry grilled cheese might just get you addicted, so consider yourself warned.

From The Pantry:
- 4 cup strawberries, hulled & quartered
- 1 tablespoon coconut sugar
- 4 slices thick honey oat bread
- 1 tablespoon olive oil
- 1/2 large avocado, sliced
- 4 slices mozzarella cheese (add more to taste)
Cook Away:
- Preheat the oven to 190C.
- In a bowl toss together strawberries and sugar. Transfer to a baking tray and roast for 20 minutes, till they get juicy.
- In a skillet add olive and toast the bread slices at high heat.
- Once toasted from down side, turn and top with mozzarella cheese, roasted strawberries and avocados. Cover with a lid and cook for 3 – 4 minutes until golden brown from bottom and the cheese melts.
- Remove from heat, close the sandwich and serve.
Cut the sandwich at the table to get guests drooling over melted cheese!
