Winters or Summers, a soul warming chicken soup never fails to do the trick. Revel in that warm fuzzy feeling with our Chicken Noodle Soup.

From The Pantry:
- 900 ml chicken stock
- 175 grams boneless, skinless chicken breast
- 1 garlic clove, chopped
- 1 teaspoon fresh root ginger, chopped
- 50 grams rice noodles
- 2-3 mushrooms, thinly sliced
- 2 spring onions, shredded
- 2 teaspoon soy sauce
- 1 lemon wedge
- Fresh coriander leaves for garnish
Cook Away:
- Pour chicken stock in a large pan and add chicken, garlic and ginger. Bring to boil and reduce the heat to semi-low. Cover and simmer till the chicken is cooked, about 20 minutes.
- Remove the cooked chicken breast on a wooden board and shred into bite-sized pieces.
- Return the chicken to the stock along with noodles, mushrooms and spring onions. Pour soy sauce from top and cook for 3-4 minutes until the noodles are ready.
- Garnish with a squeeze of lemon juice and fresh coriander.
The soup is now ready to mirror your feelings and fill your tummy!
