Chicken Noodle Soup

Winters or Summers, a soul warming chicken soup never fails to do the trick. Revel in that warm fuzzy feeling with our Chicken Noodle Soup.

Prep Time: 40 minutes

Caters to: 2 serving

Challenge Level: Beginner level

From The Pantry:

  • 900 ml chicken stock
  • 175 grams boneless, skinless chicken breast
  • 1 garlic clove, chopped
  • 1 teaspoon fresh root ginger, chopped
  • 50 grams rice noodles
  • 2-3 mushrooms, thinly sliced
  • 2 spring onions, shredded
  • 2 teaspoon soy sauce
  • 1 lemon wedge
  • Fresh coriander leaves for garnish

Cook Away:

  1. Pour chicken stock in a large pan and add chicken, garlic and ginger. Bring to boil and reduce the heat to semi-low. Cover and simmer till the chicken is cooked, about 20  minutes.
  2. Remove the cooked chicken breast on a wooden board and shred into bite-sized pieces.
  3. Return the chicken to the stock along with noodles, mushrooms and spring onions. Pour soy sauce from top and cook for 3-4  minutes until the noodles are ready.
  4. Garnish with a squeeze of lemon juice and fresh coriander.

The soup is now ready to mirror your feelings and fill your tummy!
