Prawn Cocktail Canapés

Keep your company guessing ‘how does (s)he do it?’ with Prawn Cocktail Canapés, which are as fancy as they are tasty.

Prep Time: 30 minutes

Caters to: 18 canapés

Challenge Level: Intermediate level

From The Pantry:

Cocktail sauce:

  • 2 tablespoons mayonnaise
  • 1 tablespoon greek yoghurt
  • 60 ml tomato ketchup
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Canapé:

  • Iceberg lettuce
  • 18 small prawns, peeled, deveined and cooked
  • 18 parsley leaves

Cook Away:

  1. Whisk together mayonnaise, greek yoghurt, ketchup and lemon juice to create a cocktail sauce in a small glass bowl. Season with salt and pepper to taste.
  2. Tear the iceberg leaves carefully to get 18 cup like leaves that can hold the canapés.
  3. To serve, add a cooked prawn, cocktail sauce and garnish with parsley leaves.

Serve alongside lemon wedges as a pass-down hors devours!
