Schnitzel

Get that crispy fried chicken fix with it’s healthier, guilt-free cousin, the Schnitzel.

Prep Time: 15-20  minutes

Caters to: 4 gobblers

Challenge Level: Beginner level

From The Pantry:

  • 2 large eggs
  • 1 garlic clove, crushed
  • 1/2 teaspoon fresh parsley, chopped
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 cup breadcrumbs
  • 1/2 cup parmesan cheese, grated
  • 4 chicken cutlets, pounded to uniform thickness
  • 4 tablespoon olive oil
  • 4 lime wedges for garnish

Cook Away:

  1. In a wide shallow bowl, beat eggs with garlic, parsley, salt and pepper. Keep aside until needed.
  2. In a separate wide shallow bowl, mix breadcrumbs and parmesan.
  3. Dip each chicken cutlet, first in the egg mixture and then covering with breadcrumbs completely.
  4. In a large nonstick skillet, heat 1 tablespoon olive oil (for each cutlet) and turn the heat to medium-low. Cook the cutlets until golden brown, turning after about 3 minutes, ensuring its cooked through.

Garnish with fresh parsley and serve piping hot with lime wedges on the side.
